Freezer Purée Blocks for Smoothies, Dressings and Baking

Best with Over Ripe ÉVO® Hass Avocado

Note: A few brown spots or extra-soft flesh are usually fine. But if your avocado has grey flesh throughout, is very stringy, or smells sour or fermented, it’s best to discard it.

This is the highest-value salvage move: turning avocados that are hours from waste into ready-to-use purée for smoothies, dressings and baking.

What You’ll Need

  • 2–4 over ripe ÉVO® Hass avocados
  • 1–2 tbsp lime juice (about 1 tbsp per avocado)
  • Optional: pinch of fine sea salt

How to Make It

  1. Scoop avocado flesh into a bowl and mash with a fork until mostly smooth.
  2. Stir in lime juice (and salt, if using) to help preserve colour and flavour.
  3. Spoon the purée into an ice-cube tray (about 2–3 tbsp per cube).
  4. Freeze until solid, then pop out and transfer to a labelled freezer bag or container.
  5. Use within 3 months. Thaw cubes in the fridge or add frozen directly to smoothies.

Tips & Variations

  • For smoothies, blend frozen cubes with banana, spinach, milk and honey.
  • For dressings, thaw and whisk with lemon, olive oil, salt and herbs.
  • For baking, thaw and use in place of mashed banana or butter in quick breads and muffins.

Good for You

Freezing preserves the avocado’s fibre, potassium and healthy fats while preventing waste. Having pre-portioned blocks on hand makes it easy to add nutrient density to everyday recipes without extra prep.
