Avocado Fries (Crumbed and Fried or Air-Fried)

Crisp outside, creamy inside — avocado fries are a crowd-pleasing snack or side. Only firm fruit will survive the crumbing and cooking process without falling apart.

What You’ll Need

  • 2 hard ripe ÉVO® Hass avocados
  • ½ cup plain flour
  • 2 eggs, lightly beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp fine sea salt
  • Oil for frying, or air-fryer spray
  • To serve: lime wedges, aioli or yoghurt dip

How to Make It

  1. Cut avocados into even wedges (about 1 cm thick).
  2. Set up three shallow bowls: flour in the first, beaten eggs in the second, and panko mixed with garlic powder, paprika and salt in the third.
  3. Dredge each wedge in flour, shaking off excess, then dip in egg, and finally coat thoroughly in seasoned panko.
  4. For frying: heat oil in a deep pan to 180°C and fry wedges in batches for 2–3 minutes until golden. Drain on paper towel.
    For air-frying: arrange wedges in a single layer in an air-fryer basket, spray lightly with oil, and cook at 200°C for 8–10 minutes, turning halfway.
  5. Serve hot with lime wedges and your chosen dip.

Tips & Variations

  • Add grated Parmesan to the panko for a cheesy crust.
  • For a spicier version, mix sriracha or chilli garlic sauce into the dip.
  • Prepare wedges up to the crumb stage, freeze on a tray, then cook from frozen when needed.

Good for You

While still a treat, avocado fries deliver fibre, potassium and healthy fats from the fruit, with a satisfying crunch. Baking or air-frying reduces oil while keeping the texture close to deep-fried.
